now that we have that out of the way :)

haha.  how can you not bake/eat/think about muffins and not have this scene from shrek run through your head?  well, I can't.

this past weekend i wanted to bake my favorite chocolate chip cookies.  but i wanted to make them the good old-fashioned way with dairy products.  which meant henry wouldn't be able to eat any.  so i decided to make something special just for him.....so i wouldn't feel so guilty noshing on my cookie goodies ;)   

the weekend before i made these yummy peanut butter brownies (what can i say, i love to bake when i have the time and resources) with my new mini-muffin pan that i adore, and thought it would be great to use it again.  so i searched for a mini-muffin recipe on pinterest, and came across this awesome blog called weelicious, that has all sorts of yummy and nutritious recipes for wee ones :)

i ended up going for a recipe for mini sweet potato muffins, since henry loves sweet potatoes.  

it was pretty easy, but i was wondering if the measly 1/3 cup brown sugar would make them enticing enough.....but the sweet potatoes, must make them extra sweet without the sugar  because he gobbled up three of them right after they came out of the oven (and cooled off of course :) )  he likes them so much i decided to whip up another batch the next day and throw them in the freezer since i still had enough mashed up sweet potatoes (those things are enormous) and other ingredients i needed.
